Frittata Recipe

Frittata is an Italian egg dish with endless options for filling and toppings. You can plan and purchase your ingredients in advance or just throw one together with whatever you have on hand. Leftovers hold up for days and it’s delicious warm or cold. My version has two core requirements to make it seem pretty decadent while keeping it healthy:

  1. Use flavorful cheese to sprinkle on top. Skip mixing it in with the eggs where it will get lost. This way you can put extra on top for bubbly, gooey yumminess, where it counts!

  2. Add a variety of vegetables for maximum nutrition. They’ll blend in beautifully without making the dish feel like a healthy eating assignment.

That’s my method but do whatever you want. Think of it as an adult version of baked Mac and Cheese. It’s that good!


  • 6-8 large eggs, ideally local

  • 1 medium-large onion

  • 1 bunch broccolini or 1 cup broccoli

  • 1 cup other veggies of your choice - I used hot and mild peppers and tomatoes. Other favorites are peas, sautéed greens, cauliflower, green cabbage or thinly sliced Brussels sprouts

  • 1-1.5 cups cooked (al dente) pasta - any shape, preferably whole wheat. Can sub any cooked grain: faro, quinoa, or brown rice work well. You can also skip the pasta or grain add-in. Or and cooked potato hunks (technically called a Spanish Tortilla at that point but I digress).

  • 1/2-3/4 cup shredded cheese (or to taste) - I used gruyere (flavor) and mozzarella (meltiness)

  • Spices: 1/2 tsp salt, 1.5 tsp turmeric, 1 tsp. black pepper, 1 tsp. smoked paprika (optional)


  • Heat a 9” cast-iron or other ovenproof skillet on medium low burner

  • Chop and sauté onion in olive oil until soft - about 8 minutes

  • Whisk eggs in bowl with spices

  • Add chopped broccolini stems and peppers and cook another 3-5 minutes

  • Add broccolini tops and cook 3 minutes

  • heat cooked pasta or grain in microwave and add to pan along with eggs

  • Periodically stir like scrambled eggs until about 3/4 firm

  • Turn on broiler and move rack to 2nd level from top

  • Sprinkle shredded cheese over egg mixture and top with sliced tomatoes

  • Place under broiler for about 3 minutes until top is bubbling. Watch carefully to avoid burning.

  • Remove from oven and let rest for 5 minutes before cutting and serving
