Peach Butter Recipe - Crazy Good!
Every year I buy local peaches and make peach turnovers with pre-made puff pastry. Because they’re so rich, we’ll enjoy one or two and freeze the rest for later. This year I looked for a healthier option and learned about the magic of peach butter. WOW! Super-condensed peach flavor with minimal natural sweeteners and refined sugar optional. Velvety smooth. No actual butter. (You knew there was no butter, right? I didn’t, so I’m spreading the good word.) Super easy to make. Get some peaches at your local farmers market and do this. It’ll change your life!
Enjoy on yogurt, toast, oatmeal or in a peanut or almond butter sandwich. I bet it’ll make a great treat with cheese, frozen yogurt or ice cream.
5 cups ripe, peeled peaches cut into 1-2” pieces. To peel, cut a shallow “x” into peaches, drop in boiling water for 30 seconds, transfer to cold water, and peel when cool enough to handle.
1/3 cup agave nectar
3 tbsp. sugar (coconut, date or refined - brown or white)
1/3 cup water
3/4 tsp. salt
Add all ingredients to a large saucepan and bring to a boil
Reduce to a simmer
Simmer, stirring occasionally for about an hour or until liquid is minimal and thick
Blend until smooth
Option 1 - use an immersion blender, tilting pan to concentrate peaches to a 2-3” depth and blend until smooth
Option 2 - cool peaches for 20 minutes, transfer to blender or food processor and mix until smooth
Transfer to glass jar(s) when cool and refrigerate for up to 3 weeks. I’ll experiment with freezing and update recipe with results.
